- 2 lbs. new potatoes

- 4 bell peppers – red or green, preferably organic
- 2 lemons
- 2 boxes cherry tomatoes

- 2 lbs. chicken legs & thighs
- 1 loaf really great bread

- Prep
- Put the chicken in a large pan. Squeeze one lemon over the chicken, then pour over 1/4 cup olive oil. Sprinkle evenly with salt, pepper, and a generous amount of smoked paprika. Turn the pieces and sprinkle them again with the spices. Leave the chicken at room temperature.
- Rinse the cherry tomatoes, and cut them in half.
- Peel and remove the pit from the avocados. Cut them into 1-inch chunks.
- Put the tomatoes and the avocados in a bowl.
- Cut the bell peppers in half and remove the seeds and the pith.
- Peel and thinly slice the onion. Put it in a bowl, and add 1 tbsp. vinegar, and 1/4 cup olive oil.
- Strip 1 tbsp. rosemary leaves.
- Start Cooking
- Wash the potatoes and put them in the saucepan. Cover with water, add 2 tsps. salt and put them over medium-high heat.
- Put the eggs in a saucepan and cover them with water. Put them over medium heat.
- Once the potatoes start boiling, reduce the heat so the water is simmering and cook them until they’re tender, about 15 minutes.
- Once the eggs start boiling, reduce the heat so the water is simmering and simmer for 12 minutes. Drain the eggs, put them in a bowl, and cover them with cold water.
- When the grill is hot, put the chicken on it, along with the pepper halves. The chicken will take a total of 30 minutes to grill, and it grills best if you turn it occasionally. The peppers will take about 10 minutes to get nice and dark and soft, so watch them.
- If you’re taking this to the game, now is the time to get someone to help you organize everything. Make sure you have napkins – lots of ‘em – plates, silverware, and glasses., salt and pepper, the pickles, the bread, and a bread knife and drinks for the kids, if there are kids. Put the beer in the cooler, minus one which you’ll want to open now, because you’ve got to be thirsty.
- When the potatoes are cooked, drain them, and let them sit in the strainer for awhile until they’re cool enough so that you can cut them into 1-inch chunks.
- Mince the rosemary leaves, and add them to the onions and olive oil.
- Put the cut potatoes into the bowl with the olive oil and the onions, and toss. Forget about these for now.
- Put the tomatoes and the avocados in a bowl. Squeeze a half a lemon through your fingers into the bowl. Pour over about 3 tbsps. olive oil and toss well. Season with salt and pepper, toss some more, and set this aside.
- Check the chicken and turn it. If the peppers are nice and soft and golden, remove them from the grill.
- Taste the potatoes for seasoning and adjust if necessary; same with the tomatoes and the avocado.
- Check the chicken – it’s probably cooked now. If it is, put it on a platter or in something so you can easily transport it, along with the peppers.
- Drain the eggs and wrap them in a towel. These are for hard-boiled egg lovers. You can also add them to the potato salad if you want to, but do that once you get where you’re going – just remember to bring along a small knife.
- Your tailgate feast is ready to go! Don’t forget the plates and utensils. And if you’re having wine, remember a corkscrew!
