Roasted Salmon with White Bean Puree
Served with Broccoli Rabe

Garlicky roasted salmon fillets sit atop a luscious smooth white bean puree and the bite of spicy broccoli rabe in this easy to prepare menu.
- 1 bunch broccoli rabe
- 1 lemon
- 1 bunch rosemary
- 1 15.5 oz can white beans
- 4 5.5 oz salmon fillets

- Preheat the oven to 400F

- Assemble the ingredients
- Open the wine
- Prep
- Peel and mince the garlic.
- Pick leaves from rosemary to equal 1 1/2 Tbsp, mince.
- Rinse and cut the broccoli rabe into 1 ” chunks.
- Juice and zest the lemon.
- Combine half the lemon zest with 1 tsp lemon juice, 1 Tbsp olive oil, 1 tsp minced garlic, 1 tsp salt and 1/4 tsp pepper in flat dish.
- Rinse and dry the salmon fillets and lay them in the lemon juice and olive oil mixture, coating both sides. Let rest 5 minutes. Then transfer them to a baking dish.
- Drain the white beans.
- Start Cooking
- Transfer salmon to oven and roast for 10 minutes until browned on top. Remove from oven.
- Heat a nonstick skillet over medium heat, add 2 Tbsp olive, 1 tsp salt and the broccoli rabe, cook 3 minutes, stirring occasionally. Add 1/4 water, 1 tsp red pepper flakes, cover and cook 5 minutes.
- Heat another nonstick skillet over medium heat, add 2 Tbsp olive oil and the rest of the minced garlic. Cook, stirring constantly 2 minutes, add the drained white beans, the rosemary, 1 tsp salt and 1/4 tsp red pepper flakes and let heat through about 3 minutes. Transfer mixture to the bowl of a food processor, add 1/4 cup water and puree until the mixture is very smooth . Taste and adjust seasoning if necessary.
- Bring everything to the table.
